COCOA RAISIN NUT COOKIES

Cocoa Raisin Nut Cookies

1/2 cup softened butter
1/2 cup sugar
1/2 cup firmly packed brown sugar
1 egg white
1/2 cup low-fat milk
1 tsp. vanilla
2 cup oats
2/3 cup flour
1/2 cup unsweetened cocoa
1 1/2 tsp. baking powder
1 cup raisins
1/2 cup chopped peanuts

Preheat oven to 180 C (350F).
Spray cookie sheet with cooking spray.
Beat butter, sugar, egg white, until creamy.
Add milk and vanilla.
Mix well.
Stir in all dry ingredients along with raisins and peanuts.
Drop by rounded teaspoon on cookie sheet.
Bake 12-14 minutes.
Cool 1 minute on cookie sheet.
Remove to wire rack.
Makes approximately 5 dozen.
