Freezer Food Friday - Vanilla Muffins

Save yourself from the dinnertime crunch by preparing your own meals ahead of time. Prepare a week or a months worth of dinners or just throw an extra meatloaf in the oven when you're preparing tonights dinner. Freezing meals not only saves you time but it can save you money too!.

Vanilla Muffins

Vanilla Muffins

These muffins are great to have in the freezer for school lunch boxes or after school snacks. You can also freeze the batter and store in the freezer for times when you don't have time to whip up a batch of fresh muffins :)

8 tablespoons butter, melted
4 cups flour
2 cups granulated sugar
2 cups milk
4 tablespoons baking powder
1 teaspoon salt
2 eggs
1 tablespoon vanilla extract

Mix all ingredients thoroughly.
Spoon into greased or paper lined muffin tins.
Bake at 400° for 20 minutes.

Makes about 2 dozen muffins.

To freeze muffins:

Uncooked
Muffin batter can be frozen either in muffin cups or in a plastic tub. If you freeze it in a tub scoop it out into muffin cups with an ice cream scoop.

Baked
Put in freezer containers or flash freeze then put in zip bags.

    The vanilla muffins struck my eye too. I posted a bit late, but I have a good excuse ( I was in the hospital, for a recurring ilness that sets me back a few days at a time ). I am home and doing better today.
