What is 'Recipe Review'???

Now for the Review:

I made these brownies yesterday and my kids loved them, they are really rich and fudgey so they were only allowed to have one piece each, but they were very happy to have another piece in their lunchboxes today.
I ended up having to cook mine for 50 minutes but I think that has more to do with my gas oven than the recipe :)

Here is the recipe:

Fudge Brownies

1 cup melted margarine (2 sticks or 226g)
2 cups sugar
4 medium eggs
1/2 teaspoon salt
1/2 cup unsweetened cocoa
1 teaspoon vanilla
1-1/4 cups flour

First off, don't be tempted to put baking powder or baking soda into this recipe, thinking I have forgotten to list it above. This recipe does not call for any leavening other than the eggs. This is the secret that makes them chewy and fudgey. There is another recipe for Cake Brownies which does call for baking powder, if that's really what you want.

So, first melt your margarine (I do it in the microwave). Next get out a large bowl and combine the margarine and sugar with a spoon or whisk. Add all four eggs, and beat the mixture until it is sort of fluffy and emulsified. Add the salt, cocoa, and vanilla. Stir up really well. Add the flour. Stir again until the mixture is thick and chocolatey. Turn the batter into a well oiled 9 by 13-inch pan. Bake at 350° (180C) for 25 to 30 minutes. Remove from oven and cool before serving. Cut into 32 small squares.

NOTE: These are the richest brownies I have ever eaten. They do not need any frosting; actually, it would just be guilding the lily. They are pretty good with walnuts though. I add 3/4 cup of home cracked black walnuts in season, especially during the holidays. If you do crack black walnuts yourself, be sure to wear gloves while you do it, because they will stain your hands for weeks.

    They're just as good as Rachel says they are, LOL.

    I often make a double batch and freeze, so making sure I have enough eggs (8) can be a bit tricky but the payoff is that 2/3 of a carton of eggs costs, what, $3 or so and yet buying the chocolate to add to other brownies recipes would be far more than that to achieve the same fudgey consistency that the eggs help to achieve. Did that make sense? LOL.

    I love that I can make a 'special' recipe without needing to go to the shops, because I don't cook with chocolate much due to the expense. This is my stock-standard "OMG I FORGOT KID #3'S CAKE STALL AT SCHOOL TOMORROW AND ITS ALREADY 10PM" fall-back, LMAO! They actually HEAD-HUNTED me for this recipe back when Miss Moo was at kindy so they could put it in the kindy cookbook (I'd brought it to every cake stall since day dot and they always disappeared in minutes). Co-ordinator looked at recipe, then looked at me - "Are you SURE you didn't forget to write down 'chocolate'?" Tee hee. I also usually add ½ cup crushed nuts to mine - something like 40c worth. For gifts, I tend to go all out and ALSO add some white and milk choc chips, but I REALLY have to like the person, LOL.

    Oh, just a word of warning too - don't think you can stop yourself eating them by freezing them. You can eat them frozen and they taste just as good, LOL.
