Once a fresh banana is too ripe to eat don’t throw it out, you can freeze it and use it at a later date. You can either:
Peel and place it whole in a freezer bag or
Leave the peel on and freeze in a freezer bag or

Mash it and place in a sealed container to freeze.

When you need bananas for baking, just thaw and use.

    I get lazy and just throw them in the freezer whole.

    Our grocery store occasionally sells big boxes of overripe bananas for next to nothing. I like to peel and mash them all, then freeze them in ziploc bags, in 3-cup servings. It's the right amount for a double batch of banana muffins! Makes for a quick batch of fresh muffins!

    I peel and then freeze them in slices -- you can still defrost and mash the slices to use in recipes, but you can also toss the frozen slices in the blender with orange juice, yogurt and berries for a yummy smoothie! :) (The berries can be fresh or frozen as well. When I see a deal, I buy a lot and freeze them for future use, just like we do for the bananas.)
